After two years maturing in five-year-old French oak barriques and a further two years on tirage (yeast lees in individual bottles) this wine has developed beautiful complexity.
Norman Walker learned the art of sparkling winemaking from his father Hurtle before passing his secrets onto his son Nick, co-founder of O'Leary Walker. Combined, Norm and Hurtle have been at the forefront of Australia's sparkling wine industry for over 100 years. In honour of Norm and Hurtle, this sparkling shiraz is named 'Romalo', after the cellars where they spent many years fine-tuning their craft.
