Pale lemon green.
White peach, grapefruit and nectarine. Creamy oak with flint and orange blossom.
Grapefruit, peaches and cream and spicy oak. Elegant texture harmonises with oyster shell minerality and a gun flint finish.
Drinking wonderfully now, this wine will age well up to five years.
Fruit is sourced from 25-year-old vines in Charleston, Adelaide Hills. This area has a very cool climate, with the vineyard well looked after and the soils perfectly suited to growing premium Chardonnay.
The fruit for this release was pressed and split into four portions: oak with natural ferment, oak for ferment with inoculated non-saccharomyces yeasts, oak for sequential ferment with inoculated non-saccharomyces yeasts to start and with inoculated saccharomyces to finish, and stainless steel tank, inoculated with saccharomyces. Each portion had different characteristics and flavours and were re-blended back together for bottling, which has resulted in a complex and layered Chardonnay.
