The Adelaide Hills is arguably one of the best regions in Australia for Sauvignon Blanc, and our award-winning vineyard lies in the heart of the region on Wenzel Road, south-east of Oakbank. David and Sue Cherry (nee O'Leary) planted this vineyard in 1990. The soil profile is brown loam with limestone and slate schist, contributing to good drainage and moderate vigour. The elevation of this cool climate region consistently offers a natural balanced acidity to this single vineyard wine.
Fruit is harvested from our Adelaide Hills vineyard, de-stemmed and crushed then gently pressed, resulting in a fine free-run cut and a light pressings component, which are handled separately. The free-run juice is chilled to preserve the vineyard expression and purity of fruit.
Once settled, the juice is racked off solids and seeded with yeast. 10% was run off into three-year-old Sirugue oak, and the balance was fermented in tank; this oak component has added texture and length to the Sauvignon Blanc.
The Adelaide Hills experienced a perfect growing season in 2017, producing this ideal summer Sauvignon Blanc.
