Vineyard
Two heart surgeons from Adelaide own the Doctors' Vineyard in Polish Hill River. Grey loam soils over sandstone and slate make up the profile, with the top soil littered with rock; hinting at just how tough the vines need to be to sustain growth and produce quality fruit. Polish Hill River is ideal for this style, with its high perfume and minerality, and this original 41-year-old Riesling planting was always destined for something special.
Vinification
Fruit is harvested in the cool of the night, de-stemmed, crushed and the must held on skins for 24 hours. The juice is then drained and gently pressed resulting in a fine free-run cut and a pressings component, kept separately in stainless steel tanks. Adopting a European style of winemaking, this wine is fermented on 'full solids', using a natural yeast flora present in the vineyard. A cool, temperature controlled fermentation is carried out over 10-14 days. Weekly lees stirring over six months adds another layer of complexity and texture to this reserve Riesling.

It's starting to build complexity. The mandarin and lemon flavours linger in tandem with really lovely texture. Refreshing acidity. A note of Bickford's lime cordial. Harmonious. Our 2013 Polish Hill River Riesling was drinking wonderfully on release, delicately perfumed and textured with orange rind, lemon and lime. This wine, which was scored 96 points by the Halliday Wine Companion, will continue to develop wonderfully with age (if you can keep your bottles around for that long).
